To use the iPad 2 on 3G overseas, you'll be paying (massively) for roaming data... my suggestion would be to stock with WiFi or, if you'd like, wait for a way to SIM unlock the iPad 2 (which I believe is locked to AT&T if you buy from them) and get a prepaid SIM when over in Europe.
